SALT Spotlight: Wellington’s Herbs and Spices

Recently the SALT VISTAs took a trip to Wellington’s Herbs and Spices, an organic farm in Schoharie. Guided by the kind and vivacious Carolyn Wellington, they explored the farm grounds and enjoyed a delicious lunch, complete with Wellington’s Island Tea. Their gracious host showed the VISTA team the farm’s cultivated fields and recently built high tunnels. The tunnels function as greenhouses, allowing Carolyn and her husband, Frederick, the ability to extend their growing season and cultivate “cold crops” such as spinach, lettuce, herbs, and other items during the winter. The VISTAs also looked around the property’s shop of loose tea, spices, herbs, household items, and much more. It’s clear that the Wellingtons embrace the hard but rewarding work of farming and love what they do. You can visit Wellington’s Thursdays through Sundays this season.
